Triacylglycerols 

This is the chemical form in which there are the vast majority of fats and oils in nature and in foods. They are also found in this form in our body and in animals. Butter, olive oil, the beef fat, are examples. Its molecular structure consists of three fatty acids attached to a glycerol backbone. This, too, is the natural way that fish oils are. So when the fish is consumed, the oil is in the form of triacylglycerols. 
 

Ethyl Ester 

In order to concentrate the natural amounts of DHA and EPA presented in fish oils, must perform complex physical and chemical processes which involve high temperatures and pressure changes. For simplicity, we will mention that you must remove the glycerol backbone in the triacylglycerol (TAG) natural, and replace it with a molecule of alcohol (ethanol). The new concentrated substance is now an Ethyl Ester. Thus, the concentration of the essential fatty acids DHA (docosahexaenoic acid) and EPA (eicosapentaenoic acid) are increased higher than those found in natural fish levels. 

Alteration of triacylglycerols and thus creating Ethyl Ester, results, of course, no more oil itself and how well they are absorbed by the body is affected. 

Which is better? 

In general people tend to think that because there is a higher concentration of essential substances, they should be better. Research has shown that the absorption of ethyl ester is not as good as the absorption in the form of triacylglycerols. The reason is that the removal of the glycerol backbone and replacing ethanol affects how absorbed. 
  The small intestine breaks down the fatty acids that the body can absorb them. It has been found that the ethyl ester is up to fifty percent more resistant to subdivision because the backbone of ethanol, which is an industrial alcohol. 

To distinguish the difference 

The vast majority of omega-3 concentrates are sold in the market today are as Ethyl Ester. The fish oil supplements should be natural, since any manipulation alters the molecular structure of the delicate acids DHA and EPA and is why dark for sun protection that alters containers are used.
